  • 45 ripe peaches (peeled and diced)
  • 1/3 cup cane sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten free flour blend
  • 1 cup gluten free quick oats
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/2 teaspoon sea salt
  • 6 tablespoons coconut oil (solid)
  • 2 tablespoons coconut milk
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine diced peaches with cane sugar, cornstarch, cinnamon, and orange juice. Set aside.
  3. In another bowl, mix gluten-free flour, oats, brown sugar, cane sugar, and salt. Blend in solid coconut oil, maple syrup, and coconut milk until crumbly.
  4. Press two-thirds of the crumb mixture into the pan as a base. Pour over the peach filling and top with the remaining crumble.
  5. Bake for 40-45 minutes until bubbly and golden brown. Allow to cool before slicing.
