  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 5 tbsp butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g / 3/4 cup freshly grated Parmesan
  • 4 large egg yolks
  • Fresh parsley (for garnish)
  • Olive oil, salt & pepper (to taste)

Instructions

  1. Roast the garlic by drizzling olive oil over the cut bulb, wrapping it in foil, and baking at 180C/356F for 50-60 minutes.
  2. Cook peeled and diced baking potatoes in salted cold water until fork-tender, then drain and let steam dry.
  3. Mash the potatoes with roasted garlic, butter, cream, Parmesan, salt, pepper, and egg yolks until smooth.
  4. Pipe the mixture into swirls on a lined baking tray.
  5. Drizzle melted butter over the shapes and bake at 200C/400F for 15-20 minutes until golden brown.
  6. Garnish with parsley and additional Parmesan before serving.
