  • 1.2kg Sweet Potatoes
  • 6 tbsp Unsalted Butter (melted)
  • 3 large cloves Garlic (finely grated)
  • 1 tbsp Fresh Rosemary (finely diced)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan (optional)

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel sweet potatoes and slice them into uniform rounds about 3mm thick.
  3. Brush a muffin tray with melted butter. In a bowl, combine remaining butter, garlic, rosemary, salt, and pepper. Toss in potato slices until well coated.
  4. Layer one potato slice in each muffin cup, then stack remaining slices on top, brushing with any leftover butter.
  5. Cover with foil and bake for 35 minutes; remove foil and increase temperature to 200C/400F for an additional 15 minutes until golden brown.
  6. Carefully scoop out stacks and drizzle any remaining butter from the tray before serving.
