  • 1 lb ground beef
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for searing)
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt to taste
  • 12 oz linguine
  • 1 tbsp butter
  • ¾ cup heavy cream
  • ¾ cup grated Parmesan
  • Salt & pepper to taste
  • Pasta water (as needed for consistency)

Instructions

  1. In a large bowl, mix ground beef, egg, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper until just combined. Form into meatballs (20–24 pieces).
  2. Heat olive oil in a skillet over medium heat; sear meatballs until browned (about 6–8 minutes). Remove from skillet.
  3. In the same skillet, melt butter; add garlic and red pepper flakes (if using). Cook for 1–2 minutes until fragrant; stir in lemon juice and parsley.
  4. Return meatballs to the skillet; simmer for 5–7 minutes.
  5. Cook linguine as per package instructions; reserve pasta water. Blend heavy cream and remaining butter in a saucepan until melted; season with salt and pepper before tossing with linguine.
  6. Serve meatballs over linguine with extra sauce drizzled on top.
