  • 2 cups sharp cheddar cheese, (shredded)
  • 1 ½ cups sour cream
  • 1 small yellow onion, (diced)
  • 2 large yellow onions, (thinly sliced)
  • ½ cup chicken broth, (room temperature)
  • ½ cup whole milk, (room temperature)
  • ¼ cup unsalted butter, (melted)
  • 2 teaspoons garlic, (minced)
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • 4 cups vegetable oil
  • ½ teaspoon kosher salt (for crispy onions)

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch baking dish with nonstick spray.
  2. In a skillet, melt butter over medium heat and sauté diced onion until translucent; add garlic in the last minute.
  3. In a large bowl, combine thawed hash browns, cheddar cheese, sour cream, flour, salt, black pepper, cayenne pepper, dried mustard, chicken broth, whole milk, and sautéed onion mixture until well combined.
  4. Pour the mixture into the prepared baking dish and spread evenly.
