  • 6 tablespoons unsalted butter
  • 2 pounds boneless, skinless chicken
  • 6 cups low-sodium chicken broth
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic
  • 3/4 cup dry white grape juice
  • 1/4 cup all-purpose flour
  • Baguette and cheese for serving

Instructions

  1. Slice onions thinly. In a large pot, melt 4 tablespoons of butter over medium heat; add onions, thyme, bay leaves, salt, and pepper. Cook until caramelized (about 30 minutes).
  2. Stir in chopped carrots, celery, and minced garlic; sauté until softened.
  3. Push vegetables aside and brown the chicken for about 5 minutes on each side.
  4. Pour in grape juice and apple juice to deglaze the pot; simmer briefly.
  5. Sprinkle flour while stirring; gradually add chicken broth and mix well.
  6. Bring to a boil then simmer uncovered for about one hour.
