  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • 4 shallots (or 1 medium onion)
  • 1 rib celery
  • 45 thyme sprigs
  • 2 cloves garlic
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, cut into wedges)
  • 125 ml heavy cream

Instructions

  1. Preheat oven to 180C/350F.
  2. Pat chicken dry, sprinkle with salt, then brown in olive oil over medium-high heat until golden. Remove from pan.
  3. In the same pan, sauté shallots and celery until softened; add garlic and cook until fragrant. Deglaze with apple juice.
  4. Stir in flour, then gradually add chicken stock until thickened. Add apple cider (non-alcoholic) and return chicken to the pan.
  5. Cover and bake for 30 minutes; remove cover and bake for another 30 minutes.
  6. Fry apple wedges until golden; stir into casserole along with heavy cream for the final bake of an additional 20 minutes.
