  • 10 fresh corn tortillas
  • 2 cups Oaxaca cheese, shredded
  • 1 cup Chihuahua cheese, shredded
  • 2 cups red chile sauce (homemade or canned)
  • 1 medium onion, finely chopped
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, heat the vegetable oil. Lightly fry each tortilla for about 10-15 seconds on each side until pliable.
  3. Spread a spoonful of red chile sauce on each tortilla. Add generous amounts of Oaxaca and Chihuahua cheese along with chopped onions before rolling tightly.
  4. Place rolled enchiladas seam-side down in a greased baking dish and pour any remaining red sauce over them.
  5. Cover with aluminum foil and bake for 20 minutes; remove the foil and bake uncovered for another 10 minutes until bubbly and golden.
  6. Serve hot, garnished with extra cheese or fresh cilantro if desired.
