  • 1 1/2 lbs Yukon Gold potatoes (diced)
  • 1 lb ground turkey sausage
  • 5 cups chicken stock
  • 3 garlic cloves (minced)
  • 1 medium white onion (peeled and diced)
  • Salt and black pepper (to taste)
  • 1 cup heavy whipping cream
  • 2 cups chopped fresh kale

Instructions

  1. In a large stockpot over medium-high heat, cook the ground turkey sausage until browned. Break it into small pieces as it cooks.
  2. Reserve about 1 tablespoon of grease in the pot, then transfer the cooked sausage to a plate.
  3. Sauté the diced onions in the reserved grease for about 5 minutes until softened. Add minced garlic and sauté for another minute.
  4. Stir in diced potatoes and chicken stock, then return the cooked sausage to the pot. Bring to a simmer.
  5. Reduce heat to medium-low and let simmer for about 10 minutes or until potatoes are tender.
  6. Stir in chopped kale and heavy cream; simmer for an additional 5 minutes. Season with salt and pepper to taste.
