  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)
  • Fresh herb sprigs (sage, thyme, rosemary)
  • 1 head of garlic (peeled)

Instructions

  1. Allow the turkey to come to room temperature for about an hour before roasting.
  2. In a bowl, mix softened butter with chopped herbs, minced garlic, salt, and pepper until well blended.
  3. Preheat the oven to 450°F (232°C), moving one rack to the bottom third for adequate space.
  4. Remove giblets from the turkey cavity and pat it dry with paper towels. Season generously with salt and pepper inside and out.
  5. Stuff the turkey with halved lemon, fresh herbs, and garlic cloves.
  6. Rub the herb butter mixture all over the turkey, including under the skin where possible.
  7. Place on a roasting rack in a pan breast side up. Reduce oven temperature to 350°F (177°C) and roast approximately 13 minutes per pound.
  8. Check doneness with an instant-read thermometer in the thigh; aim for 165°F (74°C).
  9. Let rest for at least 20 minutes before carving to keep it juicy.
