  • 8 oz rotini pasta
  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and rinse under cold water to cool.
  2. Grill fresh corn until charred, then cool and cut off the kernels. If using frozen corn, thaw and drain.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Combine cooled pasta, grilled corn, cotija cheese, cilantro, and green onion with the dressing. Toss gently to coat.
  5. Taste and adjust seasoning as needed. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with additional cotija cheese, cilantro, and a sprinkle of chili powder before serving.
