8 oz. dry rotini pasta
9 oz. hard turkey slices, chopped
6.5 oz. turkey pepperoni, chopped
1 cup canned artichoke hearts, drained & quartered
2 cups cherry tomatoes, halved
1 cup olives, pitted & halved
½ cup pepperoncini, sliced
8 oz. mozzarella pearls
¼ cup red onion, sliced thin
⅓ cup fresh basil, sliced thin
½ cup olive oil
¼ cup red apple vinegar
2 garlic cloves, minced
1 Tbsp Italian seasoning
¼ tsp red pepper flakes
Salt & black pepper, to taste
Instructions
Cook the rotini pasta according to package directions until al dente. Drain and let cool.
In a bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper to create the vinaigrette.
Chop turkey slices and turkey pepperoni into bite-sized pieces; slice cherry tomatoes and olives; thinly slice red onion and basil.
In a large bowl, combine the cooled pasta with all prepared ingredients and drizzle with vinaigrette. Toss gently to coat.
Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
