  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir-fry sauce
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • 1/4 cup low-sodium chicken stock
  • 1/2 tbsp cornstarch

Instructions

  1. In a bowl, mix all sauce ingredients and set aside.
  2. Boil water in a large pan and blanch chow mein noodles for 20-30 seconds; strain and set aside.
  3. Heat vegetable oil in the same pan over medium-high heat; sauté onions, cabbage, and celery for about 1 minute.
  4. Push veggies to one side, add noodles and sauce to the empty space; stir until well combined.
  5. Serve warm.
