  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, vanilla, milk, and vegetable oil; mix until combined.
  4. Gradually stir in hot coffee until smooth.
  5. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Allow cooling for 10–15 minutes.
  7. In a pan over medium heat, toast chopped kataifi with butter until golden brown.
  8. Mix toasted kataifi with pistachio cream and set aside.
  9. For the ganache, microwave chopped chocolate with heavy cream for about 45 seconds; stir until smooth.
  10. Spread pistachio filling over the cooled cake and pour ganache on top.
  11. Garnish as desired before serving.
