  • 1/4 cup canola oil (or melted coconut oil)
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, mix eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Gently fold the dry mixture into the wet mixture until just combined. Stir in shredded zucchini and 3/4 cup of chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean.
  7. Allow cooling in the pan for 15 minutes before transferring to a wire rack.
