Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 cups dill pickle juice
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 cup dill pickle ranch dressing, for brushing and serving
  • Fresh dill, for garnish

Instructions

  1. 1. Marinate the Chicken: Combine chicken pieces with dill pickle juice in a large bowl. Cover and refrigerate for at least 8 hours or overnight.
  2. 2. Season the Chicken: In a separate bowl, mix salt, pepper, garlic powder, onion powder, and paprika. Toss marinated chicken cubes in the seasoning until well coated.
  3. 3. Assemble Skewers: Thread seasoned chicken onto soaked wooden skewers, packing them snugly.
  4. 4. Brush with Dressing: Brush half of the dill pickle ranch dressing over the skewers.
  5. 5. Cook: Preheat air fryer to 400°F. Air fry skewers in a single layer for about 11-12 minutes, flipping halfway through until chicken reaches an internal temperature of 165°F.
  6. 6. Garnish and Serve: Brush cooked skewers again with reserved dressing and garnish with fresh dill.
