  • 1/2 cup butter (softened)
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1 tsp vanilla extract (for filling)
  • 1/3 cup coconut cream or full-fat coconut milk
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add in the egg and vanilla extract; mix until well combined.
  4. Gradually mix in flour, baking powder, and salt until just combined.
  5. Scoop out equal portions of dough onto the prepared baking sheet and gently flatten each ball.
  6. Press down in the center of each cookie to create space for the pecan filling.
  7. In a separate bowl, combine the ingredients for the pecan pie filling and spoon it into each cookie's center.
  8. Bake for 8–9 minutes until lightly golden around the edges. Let cool slightly before transferring to a wire rack.
