  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil carrot rounds in salted water for about 10–12 minutes until fork-tender.
  3. Drain and let cool slightly before smashing each round gently with the bottom of a glass.
  4. Drizzle olive oil over the smashed carrots; season with garlic powder, smoked paprika, salt, pepper, and top with Parmesan cheese.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown and crispy.
  6. Garnish with fresh parsley before serving.
