  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line baking trays with parchment paper.
  2. Roll out puff pastry sheets slightly, prick with a fork, and bake for 35-45 minutes until golden brown. Let cool completely.
  3. Trim baked pastry edges to fit an 8×8-inch square pan.
  4. In a saucepan, whisk together sugar, cornstarch, and salt; add egg yolks and mix well.
  5. Warm milk in another saucepan; gradually whisk into egg mixture.
  6. Return mixture to heat and cook while whisking until thickened; remove from heat and stir in vanilla seeds and butter.
  7. Line a square pan with foil, layer puff pastry on the bottom, pour in custard, top with second pastry layer, press down gently, cover, and refrigerate for at least four hours or overnight.
  8. Once chilled, lift slice out using foil overhang; cut into squares and dust with powdered sugar before serving.
