  • 2 tablespoons olive oil
  • 1 pound ground turkey sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. 1. Cook the penne pasta in salted boiling water until al dente. Reserve some pasta water before draining.
  2. 2. In a large skillet, heat olive oil over medium-high heat. Brown the ground turkey sausage until fully cooked, then transfer to a plate.
  3. 3. In the same skillet, sauté minced garlic until fragrant. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes.
  4. 4. Pour in heavy cream and simmer for 3-5 minutes until thickened.
  5. 5. Add Parmesan cheese and cooked sausage back into the skillet along with baby spinach, cooking until the spinach wilts.
  6. 6. Toss drained penne pasta with the creamy sauce and adjust consistency with reserved pasta water as needed.
