  • 4 salmon fillets (6 oz each)
  • 2 tsp olive oil
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by rinsing and patting dry the salmon fillets.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add chopped sun-dried tomatoes and cook for an additional minute.
  4. Place salmon fillets skin-side down in the skillet, seasoning with salt and pepper. Cook for about 4 minutes on each side until golden brown.
  5. Remove salmon briefly, lower heat, and stir in heavy cream and Parmesan cheese until melted.
  6. Add fresh spinach until wilted; return salmon to the skillet, spooning sauce over it before serving.
