  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 5–6 minutes per side until cooked through. Remove and set aside.
  2. In the same skillet, reduce heat to medium and add butter. Sauté minced garlic until fragrant. Add orzo and toast for 1–2 minutes.
  3. Stir in sun-dried tomatoes and chicken broth; bring to a simmer. Cover and cook for about 10 minutes until orzo is tender.
  4. Pour in heavy cream and stir in grated Parmesan cheese until melted. Add spinach until wilted.
  5. Return the chicken to the skillet; let simmer for an additional two minutes before serving warm.
