  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and lightly grease a medium-sized baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a pot over medium heat, melt the butter and sauté the garlic until fragrant. Stir in flour to create a roux; cook for 1-2 minutes. Gradually add heavy cream and stir until thickened.
  4. Mix in Parmesan cheese (if using), thyme, salt, and pepper until smooth.
  5. Combine sliced potatoes with the sauce in a large bowl, tossing gently.
  6. Layer potato slices upright in the baking dish; pour any remaining sauce on top.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for another 30 minutes until golden brown.
