  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1 large sweet potato (peeled and cubed)
  • 5 cloves garlic (minced)
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water
  • 8 oz tortellini (three-cheese or other varieties)
  • 4 oz fresh spinach
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat. Add crumbled chicken sausage and cook until browned.
  2. Stir in Italian seasoning and paprika; then add cubed sweet potatoes, minced garlic, red pepper flakes, and tomato paste. Mix well.
  3. Pour in water and bring to a boil while stirring to dissolve the tomato paste.
  4. Reduce heat to simmer for about 15 minutes until sweet potatoes are tender.
  5. Add tortellini; cover and boil according to package instructions (about 10 minutes).
  6. Stir in fresh spinach just before serving until wilted.
  7. Remove from heat and stir in heavy cream; season with salt as needed.
