  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsp tomato paste, organic
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the tomato wedges and whole garlic bulbs on a baking sheet. Drizzle with olive oil and sprinkle with sea salt. Roast for about 30 minutes until soft and slightly caramelized.
  2. In a large pot over medium heat, sauté the chopped onion until translucent (about 5 minutes).
  3. Squeeze the roasted garlic out of its skins into the pot with onions. Add the roasted tomatoes, tomato paste, vegetable stock, sea salt, On Everything All-Purpose Blend, and smoked paprika. Simmer for about 10 minutes.
  4. Blend the soup until smooth using an immersion blender or standard blender. Gradually stir in the heavy cream until creamy.
  5. Serve warm in bowls alongside grilled cheese sandwiches.
