  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken or beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach or basil, chopped
  • Extra Parmesan cheese for serving
  • Fresh basil or parsley for garnish
  • Crushed red pepper flakes for extra heat

Instructions

  1. Combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, pepper, and parsley in a bowl and form into meatballs.
  2. In a large pot over medium heat, add olive oil and brown the meatballs on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, sauté diced onion until translucent (3-4 minutes). Add minced garlic and chopped celery until fragrant.
  4. Stir in diced tomatoes and broth; season with Italian seasoning, salt, and pepper. Simmer for 10 minutes.
  5. Add small pasta and cook according to package instructions (8-10 minutes).
