  • 12 stalks celery, chopped
  • 1/2 medium yellow or white onion, chopped
  • 2 Tablespoons fresh parsley, chopped
  • 45 cloves garlic, minced
  • 1 Tablespoon Italian seasoning
  • salt and black pepper
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • pinch red pepper flakes (optional)
  • 4 cups low-sodium chicken stock or broth
  • 1 cup cream or half-and-half
  • 12 Tablespoons cornstarch
  • 1 pound potato gnocchi
  • 3 cups baby spinach

Instructions

  1. Place chicken, carrots, celery, onion, parsley, garlic, Italian seasoning, salt, and pepper into the slow cooker.
  2. Pour in the low-sodium chicken stock and stir gently.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Shred the chicken directly in the pot using two forks.
  5. In a separate bowl, mix cream with cornstarch until smooth; add to the soup along with gnocchi and spinach.
  6. Switch to high heat and cook for an additional 30-45 minutes until thickened.
  7. Adjust seasonings as needed before serving.
