  • 1 package (20 oz) cheese tortellini
  • 1 tablespoon olive oil
  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil and sauté thinly sliced beef until browned (about 5 minutes). Remove from skillet.
  3. In the same skillet, add green bell pepper, onion, and garlic; sauté until softened (5-7 minutes). Combine with cooked beef.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour for about one minute to create a roux. Gradually whisk in milk and cook until thickened (3-4 minutes).
  5. Stir in provolone and Parmesan cheese until melted and smooth. Season with salt and pepper.
  6. Gently fold in cooked tortellini along with the beef and vegetables.
  7. Serve hot, garnished with fresh parsley or extra Parmesan.
