  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels, fresh or frozen
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 avocado, diced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine black beans, cherry tomatoes, corn, red bell pepper, and red onion.
  3. Add the drained orzo to the vegetable mixture and stir gently.
  4. In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and pepper. Pour over the salad and mix well.
  5. Fold in diced avocado and crumbled feta cheese (if using).
  6. Garnish with fresh cilantro before serving.
