  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 3-5 minutes until fragrant. Let cool.
  2. In a mixing bowl, cream together softened butter, white sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time followed by the vanilla extract until fully incorporated.
  4. Gradually add the flour, salt, baking powder, and baking soda, mixing gently.
  5. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips until just combined.
  6. Chill the dough in the fridge for at least an hour.
  7. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop generous dollops of dough onto prepared sheets with space between each cookie.
  9. Bake for about 12-14 minutes until golden around the edges but still soft in the center.
