  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil and sauté diced onion and bell pepper until soft (about 3–4 minutes).
  3. Stir in chopped spinach and cook until wilted (around 2–3 minutes). Season with garlic powder, salt, and pepper; remove from heat to cool slightly.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Add Italian seasoning along with salt and pepper to taste.
  5. Fold in shredded cheese and the cooled vegetable mixture until combined.
  6. Grease a 9-inch pie dish with olive oil; pour in quiche mixture evenly.
  7. Bake for 40–45 minutes until golden brown on top and set in the center.
  8. Let cool for 5–10 minutes before slicing.
