  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • Additional Cool Whip and toasted shredded coconut for topping

Instructions

  1. For the crust, crush graham crackers into fine crumbs. Mix with sugar and melted butter until combined. Press into a 9×13 inch dish.
  2. For the cream cheese layer, beat cream cheese and powdered sugar until smooth. Add coconut extract and fold in Cool Whip. Spread over crust.
  3. To prepare the pudding layer, whisk together pudding mix and half-and-half until thickened. Spread over the cream cheese layer.
  4. Top with additional Cool Whip and sprinkle with toasted shredded coconut.
  5. Cover and chill in the refrigerator for at least six hours or overnight before serving.
