  • 11/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 3/4 cups confectioners’ sugar
  • 2 tablespoons water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream together softened butter and sugar until smooth; add vanilla.
  4. Incorporate eggs one at a time, mixing well after each addition.
  5. Gradually mix in half of the dry ingredients followed by half of the milk until just combined.
  6. In another bowl, combine brown sugar, cinnamon, and chopped apple for filling.
  7. Layer half of the batter in the prepared pan, followed by half of the apple mixture and swirl gently.
  8. Repeat with remaining batter and apples; top with cinnamon-sugar mix.
  9. Bake for 45-55 minutes until a toothpick comes out clean.
  10. Cool in the pan before transferring to a wire rack; drizzle with glaze.
