  • 1 can (15 oz) white beans, rinsed and drained
  • ⅓ cup red onion, finely diced
  • ½ cucumber, chopped
  • ½ cup fresh cilantro
  • 1 scallion
  • Juice and zest of two limes
  • ¼ cup plant-based yogurt or olive oil
  • 12 cloves garlic
  • 1 tbsp maple syrup

Instructions

  1. Cook the quinoa according to package instructions. Rinse beforehand to remove bitterness and let cool.
  2. In a blender, combine cilantro, scallion, garlic, plant-based yogurt (or olive oil), lime juice and zest, maple syrup; blend until smooth.
  3. In a large bowl, mix cooled quinoa with white beans, red onion, and cucumber.
  4. Pour the dressing over the mixture; toss gently until evenly coated.
  5. Serve immediately or chill for about 30 minutes for enhanced flavors.
