  • ½ cup Dutch-processed cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup hot water
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 2 cups heavy cream, divided
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C). Grease two 8-inch round pans and line bottoms with parchment paper.
  2. In a mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, milk, sour cream, oil, vanilla, and hot water. Combine wet ingredients into dry until smooth.
  3. Divide batter between pans and bake for about 35 minutes or until a toothpick comes out clean. Let cool completely.
  4. For the mousse: Heat 1 cup of heavy cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch; temper with hot cream before cooking until thickened. Divide custard into two bowls; stir in melted dark and white chocolate.
  5. Whip remaining heavy cream until stiff peaks form; fold into each chocolate mixture.
  6. Assemble by layering one cake layer with dark mousse, followed by white mousse; repeat with second cake layer on top and chill for at least four hours.
  7. For ganache: Heat cream until steaming; pour over chopped milk chocolate and stir until smooth.
  8. Remove cake from pan; pour ganache on top and let set.
