  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter, softened
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. Prepare the Brioche Dough: Mix flour, sugar, salt, and crumbled yeast in a stand mixer. Add beaten eggs and knead until smooth. Gradually incorporate softened butter and knead until dense and slightly sticky.
  2. First Rise: Cover dough with plastic wrap and let it rise in a warm place for about 2 hours or until doubled.
  3. Prepare the Custard: Heat milk and butter with vanilla pod. Whisk together egg yolks, sugar, cornstarch, and flour in another bowl; gradually mix in hot milk. Return to heat until thickened then cool.
  4. Shape the Brioches: Roll out dough into a rectangle, spread custard over half, sprinkle chocolate chips, fold over, cut into rectangles, and place on parchment-lined baking sheet to rise again for about 2 hours.
  5. Brush & Bake: Preheat oven to 350°F (180°C). Brush risen brioches with beaten egg mixture and bake for about 10-12 minutes until golden brown.
