  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, combine cashew butter, 2 tablespoons of milk, honey or maple syrup, and vanilla extract until smooth.
  3. Mix the wet ingredients into the dry ingredients until well combined.
  4. Gently fold in the mini chocolate chips.
  5. Adjust consistency by adding more milk if needed until sticky but firm.
  6. Roll the mixture into 1-inch balls and place on a parchment-lined plate.
  7. Refrigerate for at least 30 minutes to set.
  8. Melt chocolate chips with coconut oil in intervals until smooth.
  9. Dip each ball in melted chocolate and sprinkle with extra mini chocolate chips before refrigerating again until set.
