  • 1 lb ground beef (80% lean)
  • 1 small onion, diced
  • ½ cup bell pepper, diced
  • 3 cloves garlic, minced
  • 8 oz tomato sauce
  • 1 can (15 oz) kidney beans, drained
  • 2 cups uncooked macaroni
  • 1½ cups cheddar cheese, shredded
  • ½ cup chicken broth
  • 1 tablespoon tomato paste
  • 1 packet chili seasoning mix
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  2. Add diced onion, bell pepper, and garlic; sauté until softened (3-4 minutes).
  3. Stir in chili seasoning mix and tomato paste; cook for another minute.
  4. Add tomato sauce, diced tomatoes, and chicken broth. Let simmer on low heat for about 10 minutes.
  5. Cook macaroni according to package instructions until al dente; drain and set aside.
  6. In a separate saucepan, melt butter and whisk in flour to create a roux. Gradually stir in heavy cream and milk until smooth.
  7. Mix in mustard powder, onion powder, salt, pepper, and hot sauce to create the cheese sauce.
  8. Combine cooked macaroni with the chili mixture; pour in cheese sauce and mix well until combined.
  9. Serve warm garnished with fresh parsley.
