1 cucumber, grated

2 cups cooked rice, quinoa, or cauliflower rice
1 cup cherry tomatoes, halved
1 cup cucumber, diced

Instructions
Marinate the chicken: In a bowl, combine olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper. Add chicken and coat well. Cover and refrigerate for at least 15 minutes.
Cook the chicken: Heat a skillet over medium heat with olive oil. Cook marinated chicken for about 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Let it rest before slicing.
Prepare tzatziki sauce: Mix Greek yogurt with grated cucumber (excess water removed), olive oil, lemon juice, minced garlic, fresh dill, salt, and pepper in a separate bowl.
