  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil

  • 1 tsp dried thyme or Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and thyme. Sear for 5-6 minutes per side until golden brown.
