  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups brewed espresso (cooled)
  • 1 package (about 7 oz) ladyfinger cookies
  • 1 ½ cups cherry preserves
  • ½ cup fresh cherries (pitted and halved)

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Gently fold in mascarpone cheese, powdered sugar, and vanilla until smooth.
  2. In a shallow bowl, mix cooled espresso with almond extract.
  3. Quickly dip each ladyfinger into the espresso mixture and line the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Spoon half of the cherry preserves and fresh cherry halves evenly over the cream layer.
  6. Repeat layers with remaining ingredients.
  7. Cover and refrigerate for at least 6 hours or overnight.
  8. Dust cocoa powder on top before serving and decorate as desired.
