  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes; pierce them with a fork several times.
  3. Rub each potato with olive oil and sprinkle with salt and pepper.
  4. Place the potatoes on a baking sheet and bake for about 45 minutes until tender.
  5. While the potatoes bake, cook the ground beef in a skillet over medium heat until browned; drain excess fat.
  6. Add taco seasoning and water as per package instructions; simmer for five minutes.
  7. Once baked, cut a slit in each potato and gently squeeze open.
  8. Fill each potato with seasoned beef and top generously with shredded cheese.
  9. Return to the oven for an additional five minutes until the cheese melts.
  10. Serve hot and add your favorite toppings like sour cream, tomatoes, olives, or cilantro.
