  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Butter or oil for frying
  • Sour cream, salsa, or guacamole (for serving, optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in chopped onion and cook for about three minutes. Add garlic, chili powder, cumin, paprika, salt, pepper, and tomato sauce. Simmer for 3-4 minutes.
  3. On each tortilla half, add a layer of cheeses followed by the beef mixture. Fold to seal.
  4. In a clean skillet over medium heat, lightly butter or oil it. Cook each quesadilla for 2-3 minutes on each side until golden brown.
  5. Allow to cool slightly before slicing into wedges. Serve warm with optional sides.
