4 large potatoes (about 2 pounds), peeled and diced
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
1 cup shredded sharp cheddar cheese
2 tablespoons butter
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
In a large pot, melt butter over medium heat. Sauté the diced onion for about 5 minutes until translucent, then add minced garlic and sauté for an additional minute.
Add the diced potatoes and broth to the pot; bring to a boil. Reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
Partially mash the potatoes using a potato masher for a creamy texture.
Stir in heavy cream and shredded cheddar cheese until melted. Season with thyme, salt, and pepper to taste.
