  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • 2 cups jasmine rice

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown.
  3. Flip chicken; add soy sauce, brown sugar, garlic, and ginger. Stir to combine.
  4. Pour in chicken broth, bring to a boil, then reduce heat and simmer for about 20 minutes until chicken is tender.
  5. While chicken simmers, rinse jasmine rice under cold water. In another pot, bring rinsed rice and water to a boil, then cover and reduce heat for 15-20 minutes until fluffy.
  6. Serve sliced chicken over rice with broth ladled on top.
