  • 1 cup (240 ml) of all-purpose flour
  • ½ cup (100 g) of granulated sugar
  • ½ cup (120 g) of ricotta cheese
  • 1 large egg
  • 1 tsp of vanilla extract
  • 1 tsp of lemon zest
  • ½ cup (75 g) of mini chocolate chips
  • ½ cup (75 g) of chopped pistachios
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour and sugar until well combined.
  3. In another bowl, mix together the ricotta cheese, egg, vanilla extract, and lemon zest until smooth.
  4. Gradually combine the dry ingredients into the wet mixture to form a soft dough.
  5. Cover the dough and let it rest for 30 minutes.
  6. Roll out the dough on a floured surface to about ¼ inch thick.
  7. Cut into rectangles (about 2×3 inches).
  8. For the filling, mix together remaining ricotta, mini chocolate chips, and chopped pistachios in a small bowl.
  9. Place a spoonful of filling on each rectangle and fold over to seal.
  10. Bake for 15-18 minutes until golden brown.
  11. Allow cookies to cool before dusting with powdered sugar.
