  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup (119 g) heavy whipping cream (or coconut milk for dairy-free)
  • 1 cup (113 g) shredded cheddar cheese (or dairy-free cheese)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add sliced chicken sausage and sauté until browned.
  2. Stir in diced onion, celery, red bell pepper, and minced garlic; sauté until softened.
  3. Sprinkle in Cajun seasoning, salt, black pepper, paprika, and cayenne pepper; stir for 1 minute.
  4. Pour in chicken broth and add cubed potatoes. Bring to a gentle boil, then reduce heat and simmer uncovered for 30 minutes or until potatoes are fork-tender.
