  • 1 1/2 cups light brown sugar (lightly packed)

  • 1 Tbsp vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 tsp fine sea salt
  • 1 3/4 cups all-purpose flour
  • 1 cup room temperature unsalted butter
  • 8 oz cream cheese (room temperature)
  • 6 cups powdered sugar
  • A tiny pinch of salt
  • 1/4 cup heavy whipping cream (room temperature)
  • 2 tsp vanilla bean paste
  • 1/4 cup unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 6-inch round cake pans.
  2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until combined. Add eggs one at a time and mix well before adding vanilla.
  3. Sift together cocoa powder, sea salt, and flour. Fold into wet mixture until just combined.
  4. Divide batter between prepared pans and bake for about 25 minutes or until a toothpick comes out with moist crumbs. Let cool completely.
  5. For frosting: Beat room temperature butter and cream cheese until fluffy. Gradually mix in powdered sugar, heavy cream, vanilla bean paste, and cocoa powder until smooth.
