Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat vegetable oil over medium-high heat until hot.
  3. Sear the chicken for 4-5 minutes on each side until golden brown.
  4. Remove chicken from the skillet; set aside.
  5. In the same skillet, combine brown sugar, soy sauce, ketchup, garlic, and ginger to create the sauce.
  6. Add pineapple chunks to the sauce and stir well.
  7. Return the seared chicken to the skillet, coating it thoroughly in the sauce.
  8. Cover and simmer on low heat for 20-25 minutes until cooked through.
  9. Check that the internal temperature reaches 165°F (75°C).
  10. Garnish with chopped cilantro before serving.
