  • 1 ½ cups granulated sugar (300g)
  • 3 large eggs
  • Zest of 2 lemons
  • 2 tbsp lemon juice (30ml)
  • 1 cup milk (240ml)
  • 2 cups all-purpose flour (240g)
  • 2 tsp baking powder (8g)
  • 2 tbsp fresh thyme leaves (6g)
  • 1 cup powdered sugar (120g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
  2. In a saucepan, melt unsalted butter over medium heat until golden brown; let cool slightly.
  3. In a bowl, whisk together browned butter, sugar, eggs, lemon zest, and milk until smooth.
  4. In another bowl, mix flour, baking powder, and thyme leaves. Gradually fold into the wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
  6. For the drizzle, mix powdered sugar with lemon juice; pour over the warm cake.
